Vintage 1960's Canadian Pacific Steamship Company RMS Empress of Canada dinner menu from Wednesday August 21st, 1963.
The front cover illustration is the Silver Nef, a silver sculpture in the shape of a sailing ship which was a popular table ornament at banquets during the Middle Ages and Renaissance. The back of the menu has an illustration of the Empress of Canada, and a short discussion of the Silver Nef.
The menu has the dinner menu selections, the chef's suggested menu, and a wine listing. Entrees included Roast Milk-Fed Chicken with Giblet Gravy, Emince of Beef Tenderloin Palace, Fried Silver Smelts with Tartare Sauce, Leg and Shoulder of Lamb Roasted with Mint Sauce, Supreme of Turbot Duglere, and Apricots with Rice Conde. Jellief Ox Tongue, Almond Spnge Pudding with Wine Sauce, Consomme Madrilene, and Creme Andalouse were some of the other menu highlights.
Condition: The menu is in overall very good condition. There is a small 1/2" round coffee stain near the bottom of the second page (see photo).
The menu is made of cardboard and measures 9 3/4" x 6 3/4" (248mm x 172mm).
Ship History: The ship was originally built for Canadian Pacific Steamships who operated it as the Empress of Canada (1961-1972). Carnival purchased the Empress of Canada in 1972 and operated it as the Mardi Gras until 1993 when it was sold to Epirotiki who chartered it to Gold Star Cruises and it was renamed the Star of Texas (and later Lucky Star). Epirotiki merged with Sun Lines in 1995 and the company was renamed Royal Olympic. The ship was renamed the Apollon in 1995 and sailed with Royal Olympic until 2003 when it was sold for scrap.
